Mono- and diglycerides are an emulsifier. They hold fat and water together in things that would otherwise separate, which is why they are in bread, ice cream, margarine, cake, biscuits, whipped toppings and a large share of anything with a soft, uniform texture that survives a week on a shelf.
They are made by reacting glycerol with fatty acids. The fatty acids have to come from a fat, and that is where the question starts.
What the label is allowed to say
The US regulation defining them says they are “prepared from fats or oils or fat-forming acids that are derived from edible sources.”
Edible sources. Not vegetable sources. The regulation is describing a chemical class and it has no reason to care where the fat came from, so it does not ask.
The European specification, where the additive is E 471, takes the same approach. When EFSA re-evaluated it, the opinion listed what the source materials can be in practice: coconut, palm, palm kernel, soya, rapeseed, sunflower, cottonseed, corn, olive, tallow and lard.
Tallow is rendered beef or mutton fat. Lard is pork fat. They sit in that list beside olive oil, and the ingredient list says “mono- and diglycerides” or “E471” for all of them.
So how do you find out
You mostly cannot, from the packet alone. Three things help, in order of how much they tell you.
A certification mark. Vegan, halal or kosher certification means somebody audited the supply chain, which is the only place this answer exists. This is the case where the front of the pack beats the back.
An explicit claim. Some manufacturers print vegetable mono- and diglycerides, or “of vegetable origin”, because they know it sells. When it is there it is reliable, since a false origin claim is a labelling offence in a way that silence is not.
Asking. The manufacturer knows. For a product you buy regularly this is worth one email, and the answer holds until they reformulate.
In practice it is usually vegetable
Worth saying, because the point of this page is not to make an ordinary loaf of bread frightening.
Vegetable oils are cheaper, more available and easier to handle than rendered animal fat, so most E471 in most markets is made from palm or soy. In markets with large halal or kosher demand, vegetable origin is close to standard, because manufacturers who want that trade cannot risk it.
But “usually” is not “always”, and if the reason you are asking is religious observance or a commitment you have made, “usually” is not the answer you needed. That gap is the entire reason this page exists.
The safety question, briefly
There is not much of one. EFSA re-evaluated E471 and did not identify a safety concern at the levels used in food. Mono- and diglycerides are digested much like any other fat, because chemically that is broadly what they are.
If you arrived here worried that an emulsifier was doing you harm, the evidence does not support that worry. If you arrived here asking what it was made from, that question is real and the label genuinely does not answer it.
