Agar sets Japanese kanten desserts, holds Filipino gulaman, and grows bacteria in every microbiology lab in the world. It is one substance doing all three jobs, and it comes from seaweed.

The US regulation is direct about it: agar-agar is “a dried, hydrophyllic, colloidal polysaccharide extracted from one of a number of related species of red algae”.

Red algae. No second route, no animal fallback, nothing for a label to leave out.

The name that causes trouble

Agar has an old English name, Japanese isinglass, and that name is a genuine trap.

Isinglass on its own is a completely different substance: a collagen product made from fish swim bladders, used to clarify some beers and wines. It is animal-derived, it is one of the classic invisible ingredients because as a processing aid it often never reaches a label, and it has nothing to do with agar.

So a reader who meets “Japanese isinglass” and knows what isinglass is will reach exactly the wrong conclusion. The word was borrowed a century ago for a substance that behaves similarly and comes from somewhere else entirely.

How it differs from gelatin in practice

Agar sets harder and holds better in warmth. Gelatin melts around body temperature, which is why a gelatin dessert goes soft in a warm room and dissolves on the tongue; agar does not, which is why a kanten cube keeps its edges on a summer afternoon.

That difference is the tell. A jelly that stays firm out of the fridge and gives a clean, slightly brittle bite is usually agar or Pectin, not gelatin. It is also why swapping one for the other in a recipe does not work by simple substitution: the textures are not interchangeable, and neither are the quantities.

Is there a safety question

Not in food. Agar is indigestible fibre that passes through, which is the same reason it works as a setting agent and as a laboratory medium: very little wants to break it down.

The one caution worth stating is not about the ingredient in a product but about it as a purchased powder. Because agar absorbs a great deal of water and sets firmly, swallowing it dry in quantity is genuinely a bad idea, which is a hazard of the powder rather than of the dessert. In a finished food it has already done its swelling in the pan, which is the distinction between a hazard and an exposure that the guide on it is built around.
