Reading labels when you keep halal or kosher

An ingredient list is designed to tell you what a substance is. Your question is where it came from, and those are not the same question.

There is a specific frustration in reading a label carefully, understanding every word on it, and still not knowing the answer.

It is not carelessness and it is not a gap in your knowledge. It is structural. Ingredient labelling was built to tell you what a substance is, so that people avoiding a substance can avoid it. You are asking what it was made from, and almost nothing in the labelling rules requires anyone to tell you that.

The rules say this out loud

This is worth showing rather than asserting, because it explains every other difficulty on this page.

Mono- and diglycerides are an emulsifier in bread, ice cream and a great deal else. The US regulation defining them says they are “prepared from fats or oils or fat-forming acids that are derived from edible sources.” Edible sources. It does not say plant, and it does not say animal, because for the purpose that regulation serves the distinction does not matter.

When EFSA re-evaluated the same additive in Europe, where it is E 471, it listed what those source materials can be: coconut, palm, palm kernel, soya, rapeseed, sunflower, cottonseed, corn, olive, tallow and lard.

So one line on an ingredient list, four words long, covers both olive oil and pork fat. The label is not hiding anything. It is answering a different question from yours, correctly and completely.

What we can tell you, and what we cannot

We can tell you what an ingredient is typically derived from, when the origin is fixed, and when it is not. That is a question about manufacturing and it has sourceable answers.

We cannot tell you whether something is halal or kosher. That is a ruling, not a fact about a substance. It depends on the school of thought, the certifying body, and in several cases on details of processing that no ingredient list records. Bodies that certify for a living disagree with each other on specific ingredients. A website that hands you a verdict is either unaware of that or hoping you are.

The ingredients where origin is the whole question

These are the ones worth learning, because each one is a name that gives nothing away.

Gelatin is collagen from pig or cow. The name is honest, but “gelatin” satisfies the labelling rules on its own, so the label will not usually say which animal. It also turns up where nobody looks for it: in a fruit sweet, in a low-fat yoghurt, in a capsule shell.

Mono- and diglycerides is the one above. Same four words whether it came from palm oil or lard, and it appears in an enormous range of everyday baked goods.

Rennet curdles milk to make cheese. Here the US regulation is unusually helpful: it names the section “Rennet (animal-derived) and chymosin preparation (fermentation-derived)” and describes animal rennet as an extract of the fourth stomach of calves, kids or lambs. Both routes are in ordinary use and a cheese label saying only “rennet” has told you nothing about which.

Whey is what is left when milk is curdled in cheesemaking, which means it usually carries the rennet question with it. It is also a dairy allergen, so it cannot hide, which makes it the easiest one on this list to spot and the hardest to reason about.

Carmine is a red made from insects, and on cosmetics it is usually printed as CI 75470, which looks like every other colour index number.

Shellac is a resin secreted by an insect, and on sweets it is usually called confectioner’s glaze or simply glazing agent.

Why a certification mark is worth more here than anywhere else

This site normally argues that the back of the pack beats the front. The ingredient list is checkable and marketing claims are not.

This is the case where that is reversed, for the same reason it is reversed for people avoiding animal ingredients. The information you need is not on the back of the pack at all. It is upstream: which supplier, which process, which fat went into the emulsifier. A certifying body can audit that. A reader holding the packet cannot, however carefully they read.

So the order is the opposite of usual. A credible certification mark first. The ingredient list second, to catch the products that carry no mark. And the manufacturer third, for the specific question the list cannot answer, which is very often “which animal” or “which fat”.

The practical version

Most products are not borderline. The short list of ingredients that turn on origin is genuinely short, and once you know the six above you have covered most of what causes doubt in an ordinary shop.

The rest is knowing which question to ask whom. The label tells you an ingredient is present. Only the manufacturer or a certifier can tell you what it was made from, and asking them is not a failure of label reading. It is the correct next step, because the label was never going to carry that answer.
