Take gluten out of bread and something has to do gluten’s job: hold gas, give stretch, stop the crumb collapsing. Xanthan gum is what usually does it, which makes it one of the most important ingredients in a gluten-free kitchen and one of the most anxiously searched.

What the regulation names, and what it leaves out
The US definition is specific about manufacturing. Xanthan gum is “a polysaccharide gum derived from Xanthomonas campestris by a pure-culture fermentation process and purified by recovery with isopropyl alcohol”.
An organism is named. A purification solvent is named. What is not named anywhere is the sugar the bacteria were fed, and that feedstock can be corn, soy, or, in some production, wheat.
So the ingredient name carries no information about the substrate, which is the entire question a coeliac reader is asking.
What that does and does not mean
Two things, and holding both is the honest position.
Gluten is a protein and xanthan gum is not. The bacteria consume the sugar and secrete a polysaccharide, and the recovery and purification steps are aimed at isolating that polysaccharide. Gluten protein does not survive into the finished gum as a designed matter.
“By design” is not the same as “verified in this packet”. The US gluten-free rule sets a threshold of less than 20 parts per million, and a product carrying that claim has to meet it. That claim, on the packet, is the thing that actually answers the question. The word xanthan on its own does not, and neither does anything on this page.

The other names
“Corn sugar gum” appears on some labels and is worth understanding correctly: it is the same substance with a claim attached about the feedstock, not a different or safer gum. When a manufacturer prints it they are telling you something real, and its absence tells you nothing.
Is there a safety question
For most people, no. Xanthan gum is a fibre that passes through largely undigested, which is exactly why it thickens.
The caveats that exist are about quantity rather than presence. Large amounts have a laxative effect, as most indigestible gums do, and that is a property of eating a lot of it rather than of meeting it in a slice of bread. It also thickens liquid on contact, which is why it is used in medically prescribed thickeners, and why the powder is handled deliberately rather than casually. Neither of those is a reason to avoid the trace in a loaf, and the distinction is the one the hazard and exposure guide exists to make.
