Gum arabic is one of the oldest food ingredients still in daily use. It is the dried sap of acacia trees, tapped from the stems and branches, and it does an unglamorous job extremely well: keeping the oils in a soft drink from floating to the top, stopping sugar crystallising in a sweet, binding pigment in watercolour paint and holding the coating on a pill.

The regulation describes it in one sentence, and one word in that sentence sends readers somewhere unexpected.

Leguminosae, and what it does not mean

The US regulation places acacia in the genus Acacia, family Leguminosae. Leguminosae is the legume family. Peanuts are in it. So are soybeans, lentils, peas and beans.

That is a botanical classification of the tree, and it is the reason searches about gum arabic and nut allergy exist at all.

What it is not is an allergen finding. Being in a plant family is a statement about flowers and seed pods, not about the proteins in one particular exudate from one particular part of one particular species. Peanut allergy is a reaction to specific peanut proteins; a tree gum is not those proteins because it is in the same family, any more than an almond and a peach being related makes them interchangeable to an immune system.

The law reflects that. Acacia is not among the substances US law names as major food allergens, and it does not appear on the EU list either.

What is actually true about it

It is a plant product, straightforwardly, with no origin question of the kind Mono- and diglycerides or Glycerin carry.

It contains no gluten, being a tree exudate rather than a cereal. That is one of the reasons it turns up so often in gluten-free baking alongside Xanthan gum and Guar gum, where the missing structure has to come from somewhere.

It is a soluble fibre, which is why large amounts can produce the digestive effects any soluble fibre produces, and why it appears in fibre supplements at doses far above the trace in a fizzy drink.

Why the label rarely says acacia

Most products print gum arabic, some print acacia gum, some print E414, and cosmetics print Acacia Senegal Gum. Four names for one substance, and a reader who knows one of them may not recognise the others.

This is the ordinary condition of ingredient labelling rather than anything unusual, and it is the reason the names index lists every form we know of rather than only the one a regulation happens to prefer.

The supply, which is worth knowing

Gum arabic is harvested largely in the Sahel, with Sudan historically the dominant producer. That makes it one of the few ingredients on this site whose availability tracks events rather than chemistry, and it is why formulations sometimes swap it for other gums without the front of the pack changing. If you read labels because a specific gum causes you trouble, that substitution is a real reason to check a familiar product again.
