Guar gum thickens ice cream, holds sauces together, keeps gluten-free dough workable and stops the oil separating out of a dressing. It is made by milling a bean.

The US regulation is unusually plain about it: guar gum is “the natural substance obtained from the maceration of the seed of the guar plant, Cyamopsis tetragonoloba”.

A named plant, a named part of the plant, and a process that amounts to grinding. After a run of ingredients whose regulations describe fermentation vats and purification solvents, this one reads almost like a recipe.

What it settles

Gluten. Guar is a legume, not a cereal, so there is no gluten in the plant to begin with. Unlike Xanthan gum, where the question is what the bacteria were fed, there is no hidden substrate here: the bean is the whole story.

Animal origin. There is no animal-derived route to guar gum, so it closes rather than opens the question, in the same way Pectin and Agar do.

What it does not settle

It is a legume, and legumes other than soybean and peanut are not major food allergens under US law. So a guar gum reaction, which is uncommon but documented, gets no Contains statement, no bold emphasis and no help from the allergen line.

This is the same structural gap that Sulfites sit in from a different direction: the label declares the ingredient honestly under its own name, and the allergen system, which is what most people have learned to read first, does not carry it. If guar is on your list, the ingredient list is the only line that will tell you.

Guar and xanthan together

Gluten-free baking often uses both, because they fail in different places. Guar gives viscosity in cold and low-acid mixtures and softens in heat and acid; xanthan holds up in both and gives more stretch. A recipe that calls for one and not the other is usually making a texture decision rather than a health one.

Guar is also considerably cheaper, which is why it appears more often in the products where thickening is the whole job, like ice cream and low-fat dairy, and less often where structure is needed.

Is there a safety question

Not at the amounts in food. Guar gum is a soluble fibre, unabsorbed, and it does the same thing in the gut that it does in the pan: it holds water and slows things down. In quantity that means the laxative effect common to gums, which is about how much rather than whether.

There is one genuine historical caution that belongs on the record: guar gum was sold in the 1980s as a weight-loss tablet designed to swell in the stomach, and those products caused oesophageal obstructions and were withdrawn. That is a hazard of a swelling tablet, not of a thickener dispersed through a sauce, and keeping those two apart is exactly what the hazard and exposure guide is for.
