Vanilla the plant is expensive, slow and difficult. Vanillin the molecule is neither, and almost all the vanilla flavour in the world is the molecule.
It is the compound doing the work in a vanilla bean, and it can arrive in a product by three routes: extracted from cured beans, derived from lignin left over from wood pulping, or synthesised from petrochemical feedstock. The molecule is the same at the end of each.
The word that is defined, and the word that is not
This is the useful part, and it repeats a pattern that runs through this site.
Vanilla extract is a legal term. The US standard of identity requires it to be a solution in aqueous ethyl alcohol, with not less than 35 percent alcohol by volume, made from a specified weight of vanilla beans, and the beans themselves are defined by species: Vanilla planifolia and Vanilla tahitensis. A manufacturer printing “vanilla extract” has met all of that.
Vanilla flavouring is not. There is no equivalent standard behind it, and no requirement that a bean was involved.
So the same shelf carries a term somebody had to qualify for and a term nobody had to meet anything to use, printed in the same typeface. That is exactly the asymmetry the guide on what a label is allowed to promise describes with the word healthy.
The alcohol, which nobody expects
The 35 percent minimum is the fact most likely to matter to a reader here, and it is counterintuitive: the traditional, expensive, natural-sounding option is the one that is over a third alcohol by law, and the synthetic vanillin powder beside it is not.
For anyone observing halal, that is a real question about the extract rather than about the flavour compound, and it is the sort of thing an ingredient list will not raise because the alcohol is a defining component rather than a separate ingredient. Natural, artificial, and what those actually describe
Under the flavour labelling rule, “natural flavour” describes origin: the flavouring came from a plant or animal source rather than being synthesised. Vanillin from a bean and vanillin from wood pulp can both qualify; vanillin from petrochemical synthesis is artificial.
None of that is a statement about the molecule, which is identical, and none of it is a statement about quality. It is a statement about a supply chain. The clearest way to see how little the word natural constrains anyone is the guide on natural and clean.
The beaver
The claim that vanilla flavouring is made from castoreum, a beaver secretion, circulates permanently and deserves a plain answer rather than a knowing one.
Castoreum is a real substance with a real, longstanding approval as a flavouring, and it has genuinely been used in small quantities in flavour work. What it is not is a meaningful source of the world’s vanilla flavour, for the ordinary reason that it comes from beavers and vanillin comes from industrial chemistry at a fraction of a fraction of the cost. Anyone doing arithmetic on the scale of both reaches the same place.
We are not going to state a percentage, because we could not source one we would stand behind, and a confident number is exactly how this claim spreads in the first place.
