Sodium benzoate keeps soft drinks, pickles, dressings and sauces from spoiling. It works in acidic conditions, which is why it turns up in exactly those products and not in bread.

Most of what is written about it treats it as a straightforward villain, and most of that is not the interesting part. The interesting part is a reaction that needs a second ingredient to happen at all.

The one genuine problem

Under certain conditions, sodium benzoate and ascorbic acid, which is vitamin C, can react in a drink to form benzene. Benzene is a known human carcinogen, so this is not a trivial finding, and it is not folklore: regulators tested soft drinks, found detectable benzene in a minority of them, and the industry reformulated.

The conditions matter and they are specific. It needs both ingredients present, and it is promoted by heat and by light, which is why storage played a part in the results. It is a slow reaction in a bottle rather than something that happens in a mouth.

Two things follow, and we would rather give you both than the half that makes a better headline.

The combination is what matters, not the preservative alone. Sodium benzoate in a pickle jar with no vitamin C beside it is not doing this.

No label will point it out. An ingredient list will faithfully show sodium benzoate and ascorbic acid, in order, honestly declared, and nothing on the packet says the two have a chemistry together. This is one of the clearest examples on the site of a label being complete and still not answering the question.

The naming detail worth having

The regulation notes that the salt “is not found to occur naturally”, which is true and slightly misleading on its own. Benzoic acid, its parent, does occur naturally, notably in cranberries, prunes and cinnamon, and appears on labels as E210.

So a product can be preserved by something that occurs in fruit or by its manufactured sodium salt, and the distinction between them is real chemistry rather than a marketing one. Neither fact settles safety in either direction, which is the same trap the Propylene glycol page walks through from the opposite side.

On skin, and for children

Sodium benzoate is also a cosmetic preservative, and like Propylene glycol it is a contact irritant for a small number of people rather than a common allergen. If your skin reacts to leave-on products without an obvious pattern, it belongs on the list you check, which is the subject of the page for reactive skin.

It also appears in the mixture studied in the research behind the EU warning on certain colours, which is the sentence Tartrazine carries. That study tested combinations rather than single additives, which is exactly why the warning is worded about mixtures and why quoting it as being about one ingredient overstates it.
