Beta-carotene is what makes a carrot orange, and it is one of the few things on an ingredient list that is a colour and a nutrient at the same time: the body converts it into vitamin A as it needs it.
That double identity is why it appears in three different places on a label, sometimes at once. As a colour in margarine and soft drinks. As a nutrient in a fortified food. As an active in a supplement, where the amounts are entirely different.
Two routes, one word
The US colour additive regulation is admirably brief about origin: the additive is “β-carotene prepared synthetically or obtained from natural sources”.
Both are permitted, the molecule is identical, and the label says beta-carotene or E160a either way. This is the origin-silence pattern that runs through Mono- and diglycerides and Glycerin, with one important difference: here neither route is animal-derived. The natural sources are algae, fungi and plants, and the synthetic route is chemistry. So a reader avoiding animal ingredients gets to stop, which is not true of the other two.
The relevance to people avoiding animal ingredients is therefore mostly reassurance, with the standing caveat that a colour is one line in a list and the certification mark on the front covers what the list cannot.
The caution that belongs somewhere else
Search this ingredient and you will meet a serious-sounding finding: large trials of high-dose beta-carotene supplements found more lung cancer among smokers, not less, and were stopped early.
That is real and it matters, and it is also not about the beta-carotene colouring a drink. The trials used supplement doses far above dietary intake, in a population with a specific existing risk. Eating carrots was never the exposure being tested, and dietary carotenoids have never carried that finding.
We are stating it plainly rather than leaving it out, because a reader who meets it elsewhere deserves to have met it here first with the conditions attached. For parents
Beta-carotene appears in foods aimed at children, and the question that reaches us is usually whether a colour is a reason to avoid a product. Here it is among the least alarming answers available: it is the pigment of the vegetables the same parents are being encouraged to serve, and it is a vitamin A precursor rather than a foreign compound.
The one thing worth recognising is harmless and occasionally startling. Enough carotene, usually from an enthusiastic quantity of carrot or sweet potato, turns skin faintly orange. It is called carotenaemia, it resolves when intake drops, and it is not jaundice, though it sends people to a doctor regularly enough to be worth naming here.
