E numbers, decoded
An E number is an identifier, not a warning label. It is closer to a passport than a criminal record.

E numbers have the worst public image of anything in food labelling, and the reason is almost entirely aesthetic. They look like codes. Codes look like something being hidden.
What an E number actually means is close to the opposite. It means a substance has been evaluated by European regulators, approved for specific uses, given an identifier, and is now legally required to appear on the label. An unnumbered additive is not a purer product. It is usually a product sold somewhere that does not use this system.
What the number tells you
The ranges are roughly grouped by function, which makes an unfamiliar list easier to parse at a glance.

So E202 sits in the preservative range, and it is Potassium sorbate, which stops mould growing in things that would otherwise grow mould.
Vitamin C is E300. Lecithin, the thing that keeps chocolate from separating, is E322. Several of the numbers people avoid on principle are substances they would happily eat under their ordinary names.
Some you have probably already met
Numbers stop looking like codes once a few of them have names attached.

Two of those five matter mainly to people avoiding animal ingredients rather than for any safety reason, which is a good illustration that a number tells you what a substance is and nothing at all about whether you want it. The full list of names we index, numbers included, is on the names page.
What approval actually involves
An additive gets a number after an assessment that usually sets an acceptable daily intake: the amount you could consume every day, across a lifetime, without expecting harm. Permitted uses and maximum levels are then set to keep realistic diets well underneath it.
The number is not permanent. EFSA re-evaluates additives as new data arrives, and the figures move. Sorbates are the clearest case, and the history matters: the group intake was 25 mg per kilogram of body weight in 1996, was cut to a temporary 3 mg/kg in 2015 after a re-evaluation, and was revised to 11 mg/kg in 2019 once a new reproductive toxicity study had been assessed.
That sequence gets quoted selectively in both directions. Take only the 2015 step and you have a safety limit being slashed. Take only 2019 and you have regulators relaxing. What actually happened is that better evidence arrived and the number was revised twice, which is the system working rather than failing.
In the United States the framework differs: many additives sit under the generally recognised as safe provisions in 21 CFR Part 182 rather than carrying an EU-style number.
What an E number does not tell you
Whether it suits you. Approval is population-level. It says nothing about your allergy, your intolerance or your condition. That is the gap Pura is built for, and the reason a universal approval and a personal answer are different things.
How much is in there. The number identifies the substance, not the quantity. Position in the ingredient list is your only clue, since the list runs in descending order by weight.
Whether the food is good. A biscuit with no additives is still a biscuit. Additives and nutrition are separate questions, and conflating them is how people end up feeling virtuous about a product that is mostly sugar.
How to read a list with numbers in it
Look at what comes first, because that is most of what you are holding. Check whether anything in the list is on your own list, for your own reasons. Then ignore the rest of the numbers, because they are identifiers doing their job.
If a specific number worries you, the useful move is to look up what it is and what intake was set for it, rather than to avoid the category. Most of them turn out to be preservatives keeping food from spoiling, which is a problem worth solving.
